This lot is from a producer named Jhonnathan Camacho, who is descendant from one of the first coffee growers in the West Valley, his grandfather Rafael Camacho Vega.

Honey processing is somewhere between a natural and a fully washed coffee. The cherry peel is removed but some amount of the fleshy inside, the "mucilage", remains while the beans are dried.  The amount of mucilage left on the coffee after the washing processes is what characterises the difference between a white honey (most mucilage removed), a yellow honey, a red honey or a black honey (least mucilage removed).
