Jesús Leiva Cardona owns the nearly 4-hectare farm called El Aguacate, which is entirely planted with coffee. Here the cherries are picked ripe and depulped the same day, then fermented, depending on the climate, for 12–24 hours. They're washed twice to remove the fermented mucilage, then dried on concrete patios, or sometimes on Nylon. Drying takes 5–7 days on average.
